Aamras (Mango Pulp Dessert )

Mangoes!! Need i say more that we literally wait for this .. just this season when you can see this king of the fruits yet again in the market πŸ™‚ There are many many recipes that you can use mangoes for but in India we are so obsessed with sweet flavors, that we somehow try to make a dessert out of everything πŸ˜› Aamras is one such famous delicacy !! Typically eaten alone or with puris, this has been an ultimate favorite among Indians πŸ™‚

This was indeed my firs time and i am glad it turned out so great !! πŸ™‚ Do try out the same and let me know how it turned out to be !!

Estimated Time : Approx 20 min

Ingredients :-

  • 2 big ripe mangoes ( preferably Alphanso )
  • Icing Sugar (if the mangoes are sweet enough you can avoid sugar/ else use it according to taste. I preferef icing sugar over the normal one as its asier to blend)
  • a pinch of cardamom powder
  • 1/2 tbsp of cream
  • 3 tbsp of milk
  • few almond flakes and strands of saffron ( optional )

The Process :-

  • Wash the mangoes and peel them
  • Cut them into rough cubes

  • Put the mango cubes in the grinder/ blender
  • Add the milk, sugar and cream

  • Grind/ blend it 3-4 times. What looks like is a paste as in the pic below

  • Sieve the paste. I dint have a smaller one so I used the big one. In any case the objective here is to remove the fiber from the paste to give it a more smoother texture

  • Once done place it in a bowl. Add almond flakes and saffron to garnish it
  • Refrigerate it for an hour or more and serve it with hot puris or eat it alone
